If I have a 500 mbps internet package ( up and down) and I run a speed test what would the download speed on the test be roughly.

Are you using speedtest.net?

What server are you choosing at your target? Sometimes you'll find that your internet speed isn't as fast as the server you're testing with so your connection appears to not be as fast as expected.

Are you sure you're comparing apples to apples? You may have a 500Mbps connection but when you measure the performance, it's being reported as 50MBps. When a lower case b is used, it infers Mega bits per second while an upper case B is used to infer Mega Bytes per second. 500Mbps is roughly the equivalent to 50MBps.
