You need to look at the PCI-E slots, some are x16 and some are x-16 2.0. Also, some SLI mobo's only do SLI mode @ x8, x8 instead of full x16, x16. Have to watch that.
Also you need to decide if you want DDR2 or DDR3 ram, some mobo's have slots for both but only a couple. If you want DDR2 look at the Asus Maximus Formula and if you're going DDR3 look at the Asus Maximus Extreme. Both look to be very good OC boards and user friendly. DDR2 is probably the most cost efficient and I plan on going with a maximus formula for my first build. I won't feel as bad overclocking cheap $50 ram as I would $200 ram. Also I was planning on an E6750 but in the interest of future proofing I think I'm just gonna go with a Q6600
