Mine is Oyster Blade Steak for beef, and Butterfly Steak for lamb.

Well, beef I'll cook a bit longer and I like a bit of fat in it, sprig of rosemary and some salted butter in le pan too....mmmmmm. The lamb I'll do pretty quick usually, more rare/medium-rare. Honey and soy works awesome.

I like a nice New York strip steak, medium. Only seasoning needed is a little salt and pepper.
