I just recently overclocked my amd athlon 64 3700+ cpu to match up with my x1900xt graphics card's performance. I changed nothing about the ram, which is a pair of corsair dual channel value select ram, and upped the FSB to 228 with a multiplier of 11. I've heard that it's almost impossible to raise the FSB much without changing ram settings, but that's what I did, and so far I haven't had any issues. Will instability with the cpu be extremely obvious if it exists or can it be very subtle? Does anyone know of any symptoms that indicate instability?

Yeah just run it over night.

If it fails after 7 or so hours dont be so concerned about it as I dont think you will be doing any OC database entrys or Running your system to the extreme for 7 hours.

Then run 1m Super Pi ! :D
