Bits and bytes

I don't really understand what allocation size ment when I format my jumpdrives or any other type of storage I just leave that alone.Is is better to leave it at default or at 512,1024,2048,4096 bytes.Is there any type of gain for changing it from default.I figured to put this in hardware because it has to do with harddrives and jumpdrives,but I know it is just as much software.
