Depends on which cards you're talking about. But SLI'd GTS beats a single GTX.

Well I've come up with this list so far with the feedback I've received

Antec 900 Case
Newegg.com - Antec Nine Hundred Black Steel ATX Mid Tower Computer Case - Retail

Gigabyte Mobo
Newegg.com - GIGABYTE GA-M55SLI-S4 Socket AM2 NVIDIA nForce4 SLI ATX AMD Motherboard - Retail

There is a combo deal on newegg for an Athlon 64 X2 6000+ AM2 processor + the GSKILL ram (2x 1GB) for $318.99

Corsair PSU
Newegg.com - CORSAIR CMPSU-520HX ATX12V v2.2 and EPS12V 2.91 520W Power Supply 100 - 240 V UL, CUL, CE, CB, FCC Class B, TUV, CCC, C-tick - Retail

Seagate Barracuda 7200.10 320GB
Newegg.com - Seagate Barracuda 7200.10 ST3320620AS (Perpendicular Recording Technology) 320GB 7200 RPM 16MB Cache SATA 3.0Gb/s Hard Drive - OEM

DVD\Cd drive
Newegg.com - Sony NEC Optiarc Black 18X DVD+R 6X DVD+RW 8X DVD+R DL 18X DVD-R 6X DVD-RW 12X DVD-RAM 16X DVD-ROM 48X CD-R 32X CD-RW 48X CD-ROM 2MB Cache SATA 18X DVD±R DVD Burner, OEM Version - OEM

Without graphics this totals out at $663 so it leaves me pretty good options.
Now if I SLI 2 8800GTS' will it be better in the long run than getting one 8800GTX? Also there is a TON of brands of video cards on newegg, is there specific ones that are going to perform better?

Depends on what resolution you are going to play on. But I'd say get the GTX. SLI is not worth it. All the brands will perform the same. But the top brands are EVGA, XFX, and BFG.
