there is a HUGE difference between the 2 gig 5970 and the 2 gig 5870... i dont know why, but the 2 gig 5870 doesnt perform any where close to the 5970...

That's because the 5970 has two GPU's in crossfire.

If you got more vram it will only really increase the fps in games if you are playing at high resolution and aa. (thats what I've heard)

This. Even though the two GPU's are clocked lower than the 5870's clocks, but you can still overclock.

video card performance is based on much more than the amount of vram. For example, there are stream processors, core clock, shader clock, and bit interface that needs to be taken into consideration.
