My laptop is PC 2100, currently i have 1 stick of 512 MB RAM operating at 266 Mhz.
I want to upgrade my memory to 1 GB by installing another 512 MB RAM. However, buying PC 2100 RAM at the moment is quite expensive, cause that type of RAM is quite rare. I want to buy a stick of PC 2700 RAM instead. And i also know that the PC 2700 RAM will be downclocked to PC 2100 speed.

So my question is: Even though the two sticks of RAM operates at the same rate ( 266 MHz ) and have the same capacity, will i benefit from dual channel ? Should i purchase a PC 2700 RAM for my upgrade, or should i buy another matching stick of PC 2100 RAM ?

The two sticks won't work in dual since they aren't the same.

If you want the benefit of dual channel, you'll have to pay the higher price for the same RAM you have.
