There are tons of places online you can learn about Linux. One example would be
http://linuxcommand.org/ which is a site where you can learn about how to use the terminal program. IMHO, the best place to do a search for Linux stuff is
http://google.com/linux

Would I be able to run everything I could on windows (ie Flash, Photoshop, PC Games)?
It's possible...but not always probable. Wine is a very popular app among Linux users. It is "an Open Source implementation of the Windows API on top of X and Unix." (that's what the website,
http://winehq.org, says) It allows you to run Windows apps in Linux, but it is
NOT an emulator.
However, Wine is not perfect, and it is not guaranteed to run all Windows apps. So far, I have only gotten a few to work.
There are alternative apps available for Linux. Instead of typing documents in MS Word, get OpenOffice.org. For photo editing, get a copy of GIMP and use that instead of Photoshop.
As for gaming, I would suggest keeping Windows on the side and using it just for gaming.
Cheers!
