That could be a whole array of problems. First few ones, make sure you have enough resources to be running your iTunes (aka don't be burning a DVD, playing DOOM3, downloading, and defragmenting your computer, while you're ripping off of the CDs).
I'd just reinstall iTunes - it's not that big of a hassle. If it persists, come back and be more explicative about your problem (exact steps).
