OK, so now I'm seriously jealous. I'm not home long enough to make stuff like that. LOL Guess I really am gonna have to make a dinner date with you if I stop in Cleveland! :)

Smoked some Conecuh sausage and a pork loin today using cherry. I tried out a new rub on the loin, Bourbon Peach from Kinder's; I also injected it with melted butter, a little apple juice, and some of the rub all mixed together. Supper was said pork loin, a crustless spinach pie (spinach, eggs, shredded cheese, seasonings... sort of like a quiche), and loaded creamed cauliflower (steamed and then ran through a food processor with butter, sour cream, some cream cheese, and salt and pepper... tastes like mashed potatoes).

Put a little summthin-summthin in the smoker tonight. Prime brisket, about 12 pounds after trimming it. I've got the controller set at 200F and my temp probe alert set at 160 to wrap it. We gonna be eatin' good in this neighborhood on the Fourth.

Another successful hunk o' meat. Brisket came out super tender and juicy as all get out. Between the brisket injection, the tallow, and the rub this thing tasted awesome. I paired it up with some broccoli and cheese (Velveeta, of course), skillet fried corn, and loaded mashed potatoes (cauliflower, actually). I'm gonna be eating on this thing for days... and I ain't even mad about it.

Thunderstorms rolled through this evening and knocked out the power. Even without power we still gotta eat so it was my Flat Iron 3-burner griddle to the rescue! Since the Flat Iron uses gas being without electricity didn't make a bit of difference. I cooked up a box of Butterball turkey burgers, seasoned with Lawry's seasoned salt, garlic powder, and onion powder, and we dined by candlelight. Of course the power came back on right after we finished eating and with it the air conditioning. Yay!
