Samsung Galaxy A11 question

I'm thinking that Ampere just displays the data the phone uses to determine charge state, battery health ETC...

The charger isn't the issue as it worked fine with it until recently.

Well, if you think it's a battery problem, try to completely drain it so it turns off by itself. If you can, set the remaining capacity in the settings to as low a number as possible. Usually it's 5% - 7% when it turns off. If possible, set as small as possible. In short - drain the battery as much as possible and then make sure the phone is definitely turned off, not just in sleep mode. And charge it again without turning it on. Then the battery will recalibrate and after that see if anything changes.
It would be good if the battery is room temperature, i.e. if you watch videos to drain it, for example, the battery will warm up, but then cool it down before you start charging again.

Pretty sure it isn't the battery.

It honestly acts like the board the USB C connector is on, however I cannot think why the board would not last a year unless the tiny crack in the phone body near the connector is causing undue stress to be put on the connector.

Well, if that's what you think, then there's no way anyone can help you. But from what I've heard so far, it seems like there's nothing wrong with your phone at all.
I still hope that you will eventually find the actual error and fix it. Much success.

The reason I think it's the board is because it acted this way when the connector on the original board started going bad.

That said I did get a new 6' USB C to USB C cable and charge current is much better and I no longer get the check your charger connection, however occasionally I'll see the charge indicator briefly change like it does when the charger is disconnected.
