Which CPU would be better for gaming (1080p) with a discrete graphics card?
Old, but still kicking Intel i7-2600
Newer, but half the threads Ryzen 3 3200G

Depending on the game, the 3200G has higher IPC to reduce CPU bottleneck at 1080p. Of course, that also depends on the GPU.

That's best decided by looking at benchmarks of both of them, looking at the specs doesn't mean much.

It depends upon the game. The best gaming CPU is the Intel Core i5-12600K, however if you are looking for a more high-end option, the Intel Core i9-12900K should be your choice.
