I would try to contact ASrock to see if they do support it since they might have not updated that list yet listing it as supported. I really don't know why it wouldn't be supported since it says it support the AM3 up to 140w and it supports all the other AM3 CPU's but if it was me I would just get in touch with them to be sure.

Are you ordering this from Newegg? I assume so as all the parts I entered in the search bar were found.

I added all the components up and it came to ~$620.

I would go with the HD 4850 over the GTS 250. The two are identical in performance but the HD 4850 is cheaper and your motherboard supports Crossfire which will offer a good upgrade path in the future.
Wrong. I've used both the 4850 and the 250, and can say that it would be much better to go with the 250. Not only do you get physx and cuda support, but it just out performs the 4850 in pretty much every game I've tested, and it runs cooler. I am a MAJOR GTS250 fan, and own one. I'm in love with it. For the price, I just feel that it can't be beat.
