Newb E-mail Question

I use G-mail webmail. I do speak back and forth with many individuals and businesses via my e-mail account. I notice that G-mail (on-occassion) replaces my IP address with their companies when I use their webmail, however, in the headers when you trace it, it reveals the location, name, ISP provider, and more personal information.

How am I able to completely block my personal information from being revealed in the headers of all the e-mails that I send?
