First time builder

I am building an AMD gaming rig.

So far I have,
Asus Sabertooth 990FX Mobo,
Phantom 410 crafted case
H80 water cooling
AMD 8 core 8150FX black edition cpu
850 watt ocz power supply.

What would be my best choice for ram and Dual video cards?

I will not be doing 3D stuff or eye finity for awhile anyways.
I was thinking 7850 HD Sapphire cards but the cpu chip I bought recommends the 6000 series any thoughts?

You can't go wrong with a 7000 series GPU.

Remember, that CPU natively supports DDR3-1866.

The sales guy was trying to sell me 1600 series ram but I held off cause I knew it could go as high as 1866 so is that what I should be looking for or is 1600 okay?

Since the CPU natively supports 1866, the bare minimum I would use is 1866. 1600 would be a bottleneck not allowing the memory controller to operate at its full potential.
