If someone accessed my mobile backup and copied and pasted them somewhere to decode them would that update my date modified date and time for me to know if someone accessed the files

What is it that you have on your iPhone that is so concerning? Just only backup your device on a computer only you have access to, and you'll have nothing to worry about. And don't share your appdata folder on your many P2P programs.

Financial data of course. Bank account savings PayPal. That is all saved on my backup. Bad part of technology these days I guess.
