The RAM I have in my computer is set at 1.8v...and the new RAM I want to get is 2.0v http://www.newegg.com/Product/Product.aspx?Item=N82E16820141199 since I can't set the voltage in the BIOS will my computer auto adjust the voltage for me? Or should I just try and find more 1.8v RAM?

If you get blue screens as you start up or the computer freezes on startup then you know the motherboard hasn't adjusted the voltage youngpcbuilder

I'd be very surprised if the Mobo doesn't auto adjust the Memory Voltage for the new RAM.
Some BIOS's may not show the settings you need to adjust but settings such as RAMV are usually set to auto for future upgrades but are just not shown.

I found this in the pdf file...section 1.4 for system memory http://download.intel.com/design/motherbd/gc2/D4427801US.pdf says (only) 1.8v...kinda sucks

guess that means I got to look for different ram lol...unless someone has any advise
Have you considered a new Mobo & RAM?
don't have the money, bad enough I'm getting a new psu and gpu and a new computer for the wife..guess I'll find ram with a bit faster timings that runs on 1.8v
