Offline apple devices

Can a device with Aeroplane mode on, WiFi Off, Bluetooth off be (1) accessed in any way or even (2) located without physical contact?

Keeping a personal journal with fingerprint/pin access only. (3) Are there any other electronic devices with journal/note taking capabilities available that never need a internet connection to set up/use, physical access only?

If you had a laptop and removed the wifi card (If it's a little older) and encrypted the drive, that would be very secure and very difficult to access from a physical location and almost impossible to access from a physical location. I would suggest using a windows laptop (Or linux if you're in to that kind of thing?) because you have a lot more control over it then a apple device.
