BACKUP PLAN?

I'm looking into a new backup plan for my work.
We have the following:
1 x SBS Server hosting 2 x databases
2 x POS (1 XP & 1 W7)
1 x XP Laptop
2 x Office PCs (XP)

Currently I'm using a portable hdd with SyncBack to backup the documents on all computers, the databases and emails. The problem is that I'm not at work everyday of the week, therefore all of this data is not being backed up everyday. I'm looking for an encrypted solution so my staff can take the hdd home and not be able to see the data.
 
I do not know about a work environment but for a home one, I would just setup a Windows Home server and use the backup software that comes with that.
Can anyone tell me if that would hold up in a work setting?
 
Can SyncBack not be ran via a schedule or anything? That would be the best solution; Back them up to a separate partition on the HDD, and then have TrueCrypt or something similar run encryption on the entire partition.
 
it's small business server. Configure active directory to redirect user's Desktop and My Documents and whatever else on all workstations/pos and offline folders for the laptop.

then just backup the SBS using ntbackup or a program like backup exec.
