    Did you remember to stick some thermal paste between the heatsink and fan? If you previous cooler was a stock amd it'd have come with the little preplaced pad, if you change to a new one you need thermal paste or it may well overheat.

    All true, though you can in fact disable it (http://www.intel.com/support/motherboards/server/SE7500CW2/hyperthr.htm), it does slow a minor few types of program down, but on the whole it's better to leave it, it's generally faster, a lot more when encoding something or doing any video work

    Nope, i'm certain that hyperthreading cpu's aren't a requirement for boards that support such, you can even disable it if you so wish and it'll run fine.
