I usually hear people using a program called Killdisk, to wipe out their hard drives.

Active@ Kill Disk. Hard Drives Eraser. Free Download.

Use Darik's Boot and Nuke (Hard Drive Disk Wipe). It uses the same standard of wiping HDD's that the Department of Defense uses, it just takes a couple days to wipe a 250gb HDD. I've used it many times and it works great.

So what do these programs do that a normal format won't?

I can't say for the other programs but with Darik's Boot&Nuke, the data can never be recovered.

you can recover data for any of them. the government has some crafty tool. powermax will do a quick or full erase. a full erase is healthier than a quick one as it will write zero's to the drives which cleans the drive. xp only does a quick erase
