Unassociate file types

I just recently had to get rid of a virus and in the process some of my file associations got messed up. Particularly the '.dat' files Kazaa uses as download place-holders are now associated with Microsoft Windows Picture and Fax Viewer, and certain files that have no extension are now associated with Notepad.

Both of these files are supposed to be completely unassociated with any programs, and I'd like to get them back that way. I'm guessing I'll have to mess with the registry, but I don't want to risk it without instruction.
