PDF files

I have a few magazines/books in pdf form (selectable text). Can anyone tell me how to convert them to an editable text format?

I think you need the full version of Adobe Acrobat to edit PDF's. I have been wrong many times before however. There are some freeware apps that can do it, but all of them I have seen put a watermark on there.

Well I don't actually plan to edit them. I just want to convert it to another format while keeping the layout (images and so).
