Quick question how do I know I am using both cores on my pentium g620 when running xbmc. For instance when I am running my dvd ripper program it shows the usage of my 2 cores.

I'm pretty sure that XBMC only uses a single core. The program is built that way and there isn't anything you can do on the user end to change it.
If it doesn't tell you it's utilizing multiple cores, then the only thing you can do is look for specific things and infer that it's using multiple cores. Firstly you can look at how much processor % it's using, and then look at the core utilization and see if it's split over 2 cores or just 1.
