I am assuming you want to rip (convert) the dvd to avi.

I have explored many different programs and have found the best quality program as the auto_gk program.

http://www.doom9.org/index.html?/autogk.htm

It works with dvd decrypter, and the autogk package of software to give you control over the output and the quality.

I found it is one of the best programs to do what you are looking for.
