Default DVD Backup/Editing

I would like to backup some of the Commercially made DVD movies my family owns onto another DVD. In the process however I would like to edit out some things (like language and certain scenes) so that my kids can watch the movies without me needing to be there ready with the mute button. I would also like to be able to do this from VHS to DVD. Does anyone have any ideas or suggestions as to how to make this happen and what type of hardware and software I would need? And no I'm not trying to sell or distribute the copies, I just want to have them here for my kids. Thanks

DVD Decrypter then DVD Shrink.

Both free just use google to find them.

I don't know how you would do VHS to DVD though.
