Authoring a dvd?

Is there authoring program that allows you to remove and add certain files on a dvd,dvd game?

i have dvd shrink already but it doesnt do what i need, basically i have a ps2 dvd game which is 4.8gigs , im looking for a program that will allow me to remove certain files on the image such as music files so i can bring the size down to 4.7gigs.
