The way I see it, Linux is free so give it a go and if it doesn't work out you can always pay for Windows later. The easiest and fastest way of accessing *nix over a network is using the command line over ssh. Additionally, learning the unix command line is a great job skill.
 
I received Windows Server 2008 for free.

OS: Windows Server 2008 (Windows only programs that have to run) or Linux

If I decide Windows Server 2008 is the way to go then is it possible to access from a different computer on the same network so I can avoid another Monitor/Keyboard/Mouse?

Also what type of firewall should I run on it as it will be running through my router. Should I run a firewall on my router or switch? (Router: WRT54G Switch: Linksys 8 Port Homegroup).
