Why would u buy multiple hard drives and use raid, as opposed to 1 large hard drive and partitioning it? Let's say im getting a 75 gb hd (10,000 rpm), would i want that or get 3 18 gb hard drives using raid 5?

Umm It depends in the raid array it would be much faster. HOwever you might as well get scsi harddrives like the seagate cheetah 15k rpm. They come in 18, 36, 74, 146 i think.

ok... new question... since 15k rpm drives r uber expensive, would it be as effective to use 2 (or 3) 10k rpm drives in raid?

SCSi is the fastest, but u have to c whether your mobo support this functiion, is not u have to buy a SCSi card.
