Monitor Suggestion (ultrawide?...)

Looking for suggestions on a new monitor configuration as I currently have quad monitors that take up a ton of space on my desk.

Little background on existing hardware configuration:
Mobo: Gigabyte Z97X-SLI-CF
Processor: Intel i7 4790k
GPU: Asus Cerberus 1070 ti
Memory: G Skill Ripjaws X Series 16GB (2 x 8GB) DDR3 SDRAM 2133
Case: Rosewill Thor
Headphones: Sennheiser HD 280 PRO
Speakers: Klipsch pro media 2.1
Monitors: Asus VS248 (x2 in landscape), Samsung SyncMater EX2220 (x2 in portrait)
Microphone: AKG Perception 200 (run through Mobile PreUSB preamp)


Ideally I'd like to swap out my two older Samsung 22" monitors and get one large monitor. Here are my current concerns:

- I enjoy gaming and want something that will be an improvement in performance
- I also do a lot of photography and would like to have a monitor I can rely on that has true color.
- I'd ideally like to get one monitor that can replace two

I've started opening the idea to an ultrawide but don't know enough about the tradeoff I would get by going that route. I would love to have different options for different price points ($500 and under vs $500 - $1,000) so I can decide how much I'd like to spend on this. Still not sure I want to unload close to $1,000 for some of the ultrawide monitors I've seen online.

Thanks in advance for any guidance as a lot has changed in the market since I last bought monitors.
