Default Help me pick a drive setup for OS reinstall

Equipment consists of:
-Two Maxtor 160gb SATA drives
-One WD 80gb PATA drive (which has been a backup device up to now)

I've been getting everything backed up for a reformat today or tomorrow, and I just finished slipstreaming SP2 and F6 drivers into an XP install. With the drives, I figure these are my options:

Install OS/Common apps to 80gb, using twin Maxtors for data later (though I will never fill 400 gigs, and this may be splitting hairs performance-wise, since it's not like there's anything special about that 80gb drive);
Continue using RAID 0 via Intel ICH5R (which may or may not be useful, considering the questionable usefulness of a soft RAID in a desktop system despite theoretical performance / benchmarks), or;
Don't do anything special; go with JBOD, destroying the existing RAID 0 volume.
What to do, what to do, what to do... and why?
