I'm looking at buying what will be a third computer so we are hoping to keep everything reasonable. The computer we are looking at has an Integrated Intel® Extreme 3D Graphics card.

We need to be able to run 2 monitors. Can we use one of the PCI slots for an additional card with this configuration or do we need a computer with a separate video card instead of an integrated card?

OP will be Window XP home.

its fine you can just add another PCI video card and you will be able to use multiple monitor. you can also disable your onboard video card if you need to.
 
You will be just fine with the integraded video card and the PCI/AGP video card.

Its very easy, just install the new video card with drivers, then go to the display properties and checkmark the "extend this monitor" box and you are ready 2 go.
