So I want to try to disable hardware acceleration in order to see if that's the problem. However, Windows 7 doesn't allow you to do this. The option is blocked out. ????

Can anyone help me do this?

Hardware acceleration for what exactly? For flash player or for the system in general?

For doing it in Flash, go to a flash video > right click > un-check hardware acceleration.
