i would use yellow for yellow if you want to connect all 5 wires in the xbox ports 
. the 5th yellow wire in the xbox ports is redundant unless you are using a light gun though. cat5 should do the trick but i can tell you from experience i had a heck of a time using non stranded cat5 for a mod i did in my xbox and eventually had to give up using it. stranded cat5 should be good enough though.
