if you tri sli the 280's you could beat nosboost's 3dmark score.

ok so once i get that stuff should i just format my hdds "i need to anyways" plug everything in and go? update bios etc

yep. all though bios updates aren't necessary unless the board doesn't natively support the proc you're trying to put in.

i would suggest a 750i FTW as it's basically the same thing as the 780i only not tri-sli..
