Everyone talks about getting g.skill for their memory.. I'm getting a 780i board that supports 1200mhz (eep 1.0)...

I don't know if anyone knows what EEP really is, I read the white paper from intel and I believe it's just a way to conserve energy when you really are idling on your computer?

Either way, should I be concerned with this? should I be looking for pc2 8000 ram instead of 6400? Or is this EEP something I shouldn't worry about?

Also, when I'm buying g.skill can I just grab 2x2gb packages with any timings since they are such great oc sticks? Or should I still look for decent timings?

always look at the timings 4-4-4-12 800mhz can overclock to ~1066Mhz @ 5-5-5-15 usually and that's what PC2 8500 is usually at stock. If you can find PC2 8500 with better timings than 5-5-5-15, get it, other wise get some low latency 6400
