I am building my first computer and was wondering why one would use Raid 0,1,5 for setting up multiple hard drives??

What is Raid 0 compared to Raid 1 to Raid 5 Etc.??

I have two hard drives that I have installed, Is it nessessary to run one of these Raid setups??
 
No, RAID is not necessary. Using RAID 0 makes two disks act as one, splitting up the data equally and storing them on both disks. Unforunately, if one disk fails, you lose all your information. RAID 1 makes both disks identical and writes to both at once. This protects you from one disk failing. If you don't use a RAID, you'll just have two separate disks with different information - perhaps one disk for programs and the other for document/music storage?
