So, what exactly is the difference between the P6T and the P6T SE, other than £45?

Well i've been googling myself blue in the face, there just isn't a lot of info out there, no review etc..

In the UK the SE costs ~ £165 where as the normal P6T costs ~£210 which is quite a large difference, I understand that in Euroland and the US the prices are much closer.. but in the UK you have to ask yourself what you are getting for that extra money and if you can live without it.

I have discovered that:

SLI is disabled on the SE (no problem as I'm running a single 4890)
There seems to be less overclocking options in the bios for the SE
The SE doesn't have the extra chip which provides the 7th and 8th SATA ports
No eSATA

What I need really is a full review of the SE board just to be sure there is nothing else missing that i might miss..

I'm sure the p6t se will still have overclocking features enough for a very good overclock, most of the features they put on high end boards are just to make overclocking easier. All the essential options will still be there for you. but why not go for this board?
Gigabyte EX58-UD3R Intel X58 (Socket 1366) PCI-Express DDR3 Motherboard

this is a nice boards and will serve you better in terms of overclocking then the p6t se and maybe even the p6t se. It;s a great board.
