motherboard: - ASUS P6X58D Premium LGA 1366 Intel X58 SATA 6Gb/s USB 3.0 ATX Intel Motherboard - Intel Motherboards

a 2tb raid0 array does not make a lot of sense. If you wanted ultimate speed a raid0 array with 2 of the ssd drives alias recommended would be the way to go (a single drive would still be way faster than a 2tb raid0) and pick up a single 1.5 to 2tb drive for data.
ASUS P6T Deluxe V2 :: INTEL i7 920 @3.4 :: XFX GTX260 :: 6gb Corsair 1600 :: Corsair 750TX :: TRUE 120 :: Samsung T240 24" :: Windows 7 X64

those video cards are pci-express so they'll work on any motherboard that has that slot, like the one hefe mentioned for example.

Whether or not those cards are compatible with your watercooling setup i don't really know. I'm not sure how much gpu waterblocks cost, but you're paying a nice premium for those cards. $515 for a $400 card just for the waterblock. How much do they cost on their own?

Since you have such a high budget I recommend using this SSD as a boot drive. It's not cheap but it uses the brand new SandForce controller and is easily the fastest drive available, even faster than the Intels. - OCZ Vertex LE (Limited Edition) OCZSSD2-1VTXLE100G 2.5" 100GB SATA II MLC Internal Solid State Drive (SSD) - SSD

If you can get your hands on one, I would highly recommend getting the 5970 over two 5870s. That will be some $150-200 cheaper at the same performance and you can toss another 5970 in there down the road for a crazy quad xfire setup.... just saying since you are looking to spend $2,500

Newegg don't have the 5970s in stock, but here:

they're not impossible to come by

- Intel i7-930 CPU @ 3.4 GHz w/ Zalman CNPS 9900 MAX
- Asus P6X58D Mainboard
- Corsair 1000W PSU
- Cooler Master HAF 932 Adv. Chassis
- SSD Intel 40 gig
- HDD: 2x SATA III 300 GBs
- LG Blu-Ray 8X
- Gigabyte GTX 670 WF @ 1098 Mhz
- Corsair Dominator 6 GB (2 x 2 GB Trip mode)
