Hmmm, going water is looking more and more attractive these days.
The northbridge on the X58 board runs a lot cooler than other recent boards namely because the memory controller was moved to the CPU die. Water really isn't needed for your chipset.

Out of curiousity, whats the threshold on the mosfets. Mine are staying at a toasty 85c.

As long as their under 100C you should be fine.
