Because the card is designed for workstation graphics processing i.e. 3D rendering. There is something slightly different about the workstation cards that makes them run better under those circumstances and vice versa for the gaming cards. I'm sure someone around here can explain it in better detail.

cards like those are used for rendering large amounts of pixels but thats about all i no about that. they are often used for things like animation rendering...

you're kidding...right?
you have a 3000 dollar card (aka one of, if not the best one made) and you dont know this?
its not as good for gaming as say a 4870x2. it can handle some games, but its not made for gaming. its made for making games, man.

Alot of the basic hardware is the same as gaming cards, but some of the hardware and the drivers are geared toward high end 3D programs for making games and movies.

In 3D programs you need to be able to display millions of polygons at once. In games it is more nessisary to display shaders and textures. Different applications - but they both can do the other, its just a matter of how well...

Quadro drivers were built with maximum image quality and pixel precision in mind, with CAD (Computer Assisted Design) and DCC (Digital Content Creation) specific functionalities such as the recently introduced AutoDetection Technology to tune the parameters inside the driver to achieve maximum performance for a predefined list of software. However, because the drivers are also based on the ForceWare drivers made for the Geforce line, it makes them suitable for casual gaming, at the expense of probable compatibility issues with the very latest games due to the age of the drivers from which the Quadro series is derived , with Quadro cards in theory pushing more data than their GeForce gaming counterparts.

The FX 5600 is based on the G80 chip used in the 8800 Ultra, but the ALUs are more specifically tuned (at the BIOS) to enhance the performance... this is optimised through old drivers revised from GeForce edition to utilise as many core cycles as possible to compute the mathematical calculations used in CAD and DCC applications.

Workstation Cards aren't as good at gaming as gaming cards are, but it goes both ways, gaming cards aren't nearly as good at CAD and such

Nah Naga, you don't make games with a Quadro. Why would you develop a game around one type of card when it is meant for a completely different one? Workstation cards are made for CAD not Crysis.
