Would a single HD5750 outperform two CrossfireX'd HD3870's when it comes to gaming?

Good question. I would say yes because the 3870's can't do DirectX11, and the 5750 is basically equal to a 4850.

Sometimes posts get lost due to the amount here.

Crossfire performed poorly in the 3 series and usually only saw a gain of 25-40%. That being said, the 3870 was one of the top models and I think two in CF would slightly outperform a 5750. You'd have to go with a 5770 or higher to see a gain.
