I am not a huge Intel fan but if I were to build an Intel box, I would go with Intel's D975XBX{aka Bad aXe--as blaackoran already stated (there are Core 2 versions out)}. It has three x16 PCIe slots, not that it is really all that needed yet, is a good and stable overclocker--bios is a bit tricky though, on the down side though--and I see only one being a downside for you really--there is no SLI and no eSATA support on the board. Just my .02 cents though.
