When you have two different HDDs you don't put them in RAID. RAID is for when you have two or more of the same HDD and you want to put combine them for redundency or speed or both. When you just have two seperat drives, you don't have to do anything. You just install your OS on the smaller SSD and then when you get into windows, it will just show that you have another HDD and you can put whatever you want in it.
For the case, there is a lot of personal preference involved in case choice but I have to say that after having my rig for a little while, I'm happy I have something that is fairly easy to work with and I think the more basic look won't get old. If you want, look at some silverstone cases, they make some good ones too. I would highly recommend going with a full tower. Much more room so you can have the flexibility to do what you want with it and they are easier to work in.
For the sound card, get a this bad boy
Newegg.com - ASUS Xonar D2X 7.1 Channels 24-bit 192KHz PCI Express Interface Sound Card - Sound Cards
You won't need a network card as long as you just run an ethernet cable to your computer which I STRONGLY recommend over wireless. If you have to use wireless though, heres my suggestion.
Newegg.com - D-Link DWA-556 IEEE 802.11n (draft)
IEEE 802.11g
IEEE 802.11b PCI Express Xtreme Desktop Adapter Wired Equivalent Privacy (WEP)
Wi-Fi Protected Access (WPA, WPA2) - Wireless Adapters
As far as temp monitoring goes, there are several free programs which will be much better than a fan controller. There really is no need for one. If you really want one just for ****s and giggle though:

Newegg.com - ZALMAN MFC2 Muti Fan Controller - Controller Panels
I've got this one to control the fans on my watercooling radiator and its pretty cool.
