How about Itanium, I 've heard that they are also very fast.

Very fast for what? What is it that you want to do on the computer.

Different processors will be faster or slower for different applications.

Itaniums are not so great for gamming, more for servers.

There is no General answer to that question, much as it is with anything computers.

It all depends on what your going to do.

How would you compare AMD and Intel (speed)?
Is AMD or Intel more for gamers ?

Again, not any specific type, but in general (I understand that this is relative and it depends on what you want to do.)

You can't directly compare their speeds, only their performence.
To compare one CPU to another, you ignore clock speeds and just go look for head to head reviews/comparisons in games, programs or applications. If you want to compare AMD and Intel CPU's when overclocked, they need to be equally overclocked for fair comparision, if one is 30% overclocked then so to must the other be.

There are plenty of review websites.

Right now at this moment intel has the crown in pretty much all ends but price.
