Best x58 RAM?

I'm putting together an i7 rig, and I plan on getting 3 gigs of RAM for it. I kind of feel like I can't go that wrong here, but is there an overall better 3 x 1 set to look at?

I heard low latency helps in games more than speed... this true?

I'm looking at:

G.SKILL 3GB (3 x 1GB) 240-Pin DDR3 SDRAM DDR3 1333 (PC3 10666)

G.SKILL PI Black 3GB (3 x 1GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800)

Is there some kind of OC'ing I'll have to do to get the 1600 actually operating at 1600mhz? Is it worth it to get this set rather than the 1333?
 
My corsair dominator 3x2GB 1600mhz kit clocks up to 1600 no problem. They run faster than some of the 1860mhz models out.
 
Between those two you really can't go wrong if your going to be using watercooling and overclocking heavily I would get the Pi black's however if your just using air cooling then the 1333mhz set will be fine as you won't use the extra speed that the 1600 offers.
 
Ok, I don't really plan on OC'ing my RAM, but I've never really set up RAM before. If it's not at the advertised speed, I'll get it up to that at least. I'll be using air, and either gaming or doing something less demanding.
