Default Another Raid 0 Question...with non-raid dual boot

I figured since another RAID question was brought up in this forum I'd ask mine here too (more exposure).

I currently have a 640gb Seagate drive with XP 64 on it.

I'd like to setup a RAID 0 with two 74gb raptors I have laying around to dual boot Windows 7 with - just to mess around.

Can I setup a dual boot in this fashion? The motherboard is a P5B deluxe wifi with the intel IHC8 controller (I believe).
