Being just for the os, you don't need a large drive, so can cheap out with a smaller one.

The drive you choose is a laptop drive, hence the 2.5" drive..

I like my seagates so
Newegg.com - Seagate Barracuda 7200.11 ST3320613AS 320GB 7200 RPM 16MB Cache SATA 3.0Gb/s 3.5" Internal Hard Drive -Bare Drive

Yes, Windows 7 is great for gaming.

And yes, all these parts will work together.

Make sure to install the 64-bit version of Win7.

Use one of these as your main OS drive:
Newegg.com - Western Digital Caviar Black WD5001AALS 500GB 7200 RPM 32MB Cache SATA 3.0Gb/s 3.5" Internal Hard Drive -Bare Drive
$70 w/free shipping

The Western Digital Black drives have onboard dual processors and a huge cache, which means it transfers data really, really fast. As an added plus, the WD Blacks have a five year warranty.

For your data drive, go with this:
Newegg.com - Western Digital Caviar Black WD1001FALS 1TB 7200 RPM 32MB Cache SATA 3.0Gb/s 3.5" Internal Hard Drives -Bare Drive
$110 w/free shipping

If you move quickly you can still get a XFX 5870 at NewEgg. The HIS version has already sold out.
Newegg.com - XFX HD-587A-ZNF9 Radeon HD 5870 (Cypress XT) 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready CrossFire Supported Video Card w/ATI Eyefinity - Desktop Graphics / Video Cards
$410

And, yes, the 650W Corsair will be enough to power everything.

EDIT: That cooler will not fit an i7. Use this one:
http://www.newegg.com/Product/Produc...82E16835207006
$32 w/$15 MIR

It requires this to mount on the i7:
http://www.newegg.com/Product/Produc...82E16835207005
$10 w/$5 MIR

I messed up, mate. You are using a 1156 CPU/mobo, not 1366. Drop the Sunbeam cooler and mounting hardware and go with this one instead.

Newegg.com - ARCTIC COOLING Freezer 7 Pro Rev.2 92mm Fluid Dynamic CPU Cooler - CPU Fans & Heatsinks
$34.48 w/free shipping

And we forgot an optical drive.
Newegg.com - LITE-ON Black 24X DVD+R 24X DVD-R SATA Black 24X DVD Writer LightScribe Support - CD / DVD Burners
$34

Other than that everything looks good.
