You can use the video card out. Plug the other monitor and remove the orginal monitor so you will have just the base of the laptop.

The only issue I can see with running everything through a hub like that would be power issues. So long as you don't have a whole mess of bus-powered devices (ones that get power through the USB cable, not through a separate power cord) you should be fine.
